El Coro Pork Chapo

Watching an el Chapo documentary and cooking pork chops a new way got me to come up with the name. But this is how I should be cooking pork chops all along. Their great!

Ingredients

  • 4 bone in pork chops 1-1 1/2 inches thick
  • 1 tsp chili powder
  • 1 tsp brown sugar
  • 1 tsp smoked paprika
  • 1 tsp dried thyme
  • 1 tsp ground mustard
  • 1 tsp sea salt 
  • 1/2 tsp onion powder
  • 1/2 tsp pepper
  • 1 tbsp parsley
  • 4 tbsp olive oil

Directions

  • Preheat oven to 400° and grease baking sheet with oil
  • Make the seasoning by mixing the seasonings in a small bowl
  • Place the pork chops on the baking pan and rub oil over each side of the chops. 
  • Season the pork chops on both sides with the seasoning.
  • Place the pork chops in the oven to bake for 22 minutes or to a temp of 145°.
  • Carefully remove from the oven and rest them for 3-5 minutes.
  • Bone-in pork chops should cook for 8-10 minutes per ½ inch of thickness at 400°
