Gringo Pork Carnitas

I’ve done my research and there are numerous ways to make true Mexican Carnitas. With so many ways I decided to make them my own way. I took what I read, tried a bunch of different things and came up with this recipe. After all it’s just seasoning the pork, cooking the meat, then frying it before serving. Nothing too special, just cooked seasoned pork then fried. 

Ingredients

  • Pork Shoulder
  • 1 tbsp Cummin
  • 1 tbsp Oregano
  • 2 tsp salt
  • 1 tsp pepper
  • 1 tsp cayenne
  • 2 bay leaves
  • Cut pieces of 1 lime
  • 3/4 c Orange Juice
  • 3/4 c Mexican Coke or regular

Directions

  • Add the ingredients in a crockpot, mix, add the pork and stir.
  • Put the crockpot on low for 4-6 hours.
  • While cooking break apart pork and stir occasionally
  • In a skillet add a lil coconut oil.
  • Put the strained pork in oil and fry until crispy
  • Heat up tortillas, add pork and other taco goodies and serve.
